Around the world 2 billion people already eat edible insects. Entomophagy, the practice of eating insects, is predicted to grow in North America by 28% by 2023. Why are insects creeping, literally, into your food? Insects need less feed and land to grow and they produce less greenhouse gases, plus they are an excellent source of protein. While dishes with sautéed grasshoppers, agave worms or cricket powder may appeal to the more food adventurous among us, with the concern around global food insecurity, they may be jumping into mainstream dishes sooner than you think.
