This Recipe Could Turn Your Family Into Veggie Lovers

Kids are always labeled as hating vegetables, but adults aren’t much better. Barely one-quarter of US adults eat 3 or more vegetables a day. To help families rediscover some yummy vegetables choices, Birds Eye has teamed up with two registered dietitians, the Meal Makeover Moms ( to offer delicious recipes the whole family will love. We tried Cheesy Spinach Bake and it was a hit with everyone, especially our 18-month old official taster, who couldn’t get enough.

Cheesy Spinach Bake

  • 1 box (10 ounce) frozen chopped spinach, thawed
  • 2 large egg
  • ½ cup lowfat milk
  • 1 tablespoon olive oil or melted butter
  • ½ cup seasoned dried breadcrumbs
  • ½ teaspoon baking powder
  • 1 cup shredded reduced-fat cheddar cheese
  • ¼ cup grated Parmesan cheese

1. Preheat over to 350oF. Spray an 8 X 8-inch baking pan with nonstick cooking spray.

2. Drain thawed spinach in a colander and pack dry with paper towels to remove excess moisture.

3. Wisk together egg, milk and olive oil in a 2-cup measure or small bowl.

4. Combine spinach, breadcrumbs, baking powder, cheese in a large bowl; stir in egg mixture until well combined.

5. Spread the mixture evenly in the baking dish. Bake 25 to 30 minutes until set and golden brown. Slice into squares and serve.

Note: Leftovers reheat nicely in the microwave.
