The Best Way To Store Cheese

You may find it interesting that cheese should not be wrapped in plastic because cheese is a living food that needs to breathe air. Wrapping it tightly in plastic wrap or putting it in a plastic bag will suffocate it and reduce shelf life and the quality of flavor.

The best approach is to wrap hard and semi-hard cheese in these options: parchment paper, cheesecloth, butcher paper, cheese storage bags, or Bee’s wrap.

Once wrapped, store cheese in the crisper bin of the refrigerator where the temperature is cold and stable with consistent humidity.

Soft and semi-soft cheese (like fresh mozzarella, ricotta, cream cheese or cottage cheese) should be stored in their original plastic containers.

I bought the book The Protein Counter and thought the amounts of protein would be in grams, but they are all off. I’m very disappointed. What measurement is the protein column?

Hi Jan,
I am not sure if you own the ebook or the paperback version of The Protein Counter, but regardless all values are given in grams as stated in the section Using the Counter Section on the page Notes. The generic values provided come from the USDA database and the brand name values come from the manufacturers. In some of the categories there is a subcategory ‘take-out’. These items were either analyzed by us or by others who do recipe analysis using reputable software.
