Veggiecraft Farms Pasta Made with Cauliflower has set out to redefine pasta by producing protein-rich, vegetable-based pasta.

Pasta Made with Cauliflower is made with only 3 ingredients – lentil flour, pea flour and cauliflower flour. The pasta is available in four shapes – elbow, linguini, penne and spaghetti. A 2-ounce serving has 190 calories, no fat, 13 grams of protein, 35 grams of carb (with 4 grams of fiber and 2 grams of natural sugar), 3.1 milligrams of iron, 470 milligrams of potassium and 15 milligrams of sodium.

All shapes cook in less than 9 minutes and the brand cautions you not to overcook. We found the pasta was not as al dente as wheat-based pasta but with the addition of sauce it was a good substitute.
