We must confess that we have been fans of Cabot cheese since we first tried it many years ago in Vermont when it was still only sold regionally. The Founders’ 1919 Collection harks back to the beginning of the cooperative when 94 Vermont dairy farmers came together to buy a local creamery to produce butter. Today, the New England based, family-owned, dairy cooperative sells cheese and dairy products nation wide.
The Founders’ 1919 Collection celebrates the cooperative’s beginnings and contains four varieties. A 1-ounce serving of each has 110 calories, 9 grams of fat, 2 grams of protein, a trace of carb, and 180 milligrams of sodium.
Private Stock, traditionally reserved for family and friends, has a traditional sharp cheddar taste with a smooth texture.
Adirondack also has a more traditional cheddar taste with a crumbly texture. Its flavor becomes more pronounced as it warms.
Lamberton is British-style cheddar with a creamier texture and a slight hint of sweet. It is named for F.C. Lamberton, one of the founding farmers from Cabot, Vermont.
Orne Meadows is an Alpine style cheddar cheese with subtle a fruity/nutty taste. It is named for Tom Orne, the Cabot plant manager during the Depression in 1929. He is credited with saving the cooperative because of his efforts to convince buyers in Boston and Providence to purchase the Cabot brand.
All varieties in the Founder’s Collection are certified kosher (Tablet K) and lactose free. When hard cheese is produced the lactose drains away with the whey leaving the cheese without the natural milk sugar, lactose.
Laughing Cow wedges which we have highlighted in the past are familiar to many. The brand has recently introduced
Cheese Dippers an all-in-one snack – Creamy Swiss with Classic Breadsticks or Creamy Swiss with Tomato & Herb Breadsticks. Both flavors have 100 calories in a snack pack, 6 grams of fat, 4 grams of protein, 200 milligrams of calcium and 230 milligrams of sodium (220 for Tomato & Herb).
The Cheese Dippers are sold five snack packs per box. They would make a good snack choice for kids or an add-on for lunch.
