SooFoo is a 9-ingredient blend of rice/grains/legumes inspired by the Middle Eastern dish mujaddara.
We sampled Original (unseasoned) which is a combination of long grain brown rice, brown lentils, wheat berries, oats, barley, black lentils, rye berries, green lentils and buckwheat. You add water, salt and 1 tablespoon of olive oil and cook for 50 minutes. The long cooking time may deter some. But the product could be made ahead and reheated. Original had a nice chewy texture but needed an add-on for flavor. We paired it with sautéed onions, garlic and mushrooms. It can easily be the base for a vegetarian dinner or could be combined with meat, fish, or poultry as a main dish.
The brand’s website provides an extensive list of options and recipes to use SooFoo. It can be the base of a salad or sloppy joes, an ingredient in soup, part of a stir-fry, the base for stuffing, a hot cereal, or even an ingredient in a muffin or cookie recipe. One serving has 160 calories, 6 grams of protein and 3 grams of fiber.
