Stonefire was a new company for us and the flatbreads they made were excellent. Traditional naan is a flatbread baked in small amounts in a searing hot, clay, tandoor oven. Within seconds the dough cooks and bubbles and the naan is done. To duplicate this process on a commercial level and obtain the true smoky taste of naan requires a great deal of ingenuity.
