Otamot

We love to try new foods. Some are great. Some don’t measure up and some become staples in our kitchen. See what you think.

Otamot, which is tomato spelled backward, was conceived by a Dad with a picky eater. The ingredient list for Essential Sauce is a group of vegetables along with oil, nutritional yeast, garlic, salt and lemon juice. There are no additives, preservatives or added sugar. Otamot comes in a 16-ounce jar with all the vegetables included listed on the front of the label.

The collection of vegetables used in Otamot, in addition to tomatoes, offers a wide array of vitamins and minerals. A half cup serving has 90 calories, 3.5 grams of fat, 3 grams of protein, 14 grams of carb (with 5 grams of fiber and 8 grams of natural sugar). 532 milligrams of potassium and 350 milligrams of sodium.

Otamot is much thicker than typical commercial tomato sauces because it is more concentrated and can be thinned with water or broth if you prefer a thinner sauce. Because of its concentrated consistency the brand suggests using Otamot Essential Sauce in numerous ways. It can be a dip, warmed or room temperature, right from the jar. It can be the base for soup, stews or to braise chicken. Or it can be an ingredient,or as a flavor enhancer, for meatballs, meatloaf or burgers. The aim of the brand is to provide a versatile vegetable-based product with multiple uses.

We used it to prepare a tomato sauce with meat to be served over pasta. We found slightly thinning the sauce was the best option for this recipe. Our tasters enjoyed the dish but found the sauce a little sweeter than traditional pasta sauce which would be expected with the considerable vegetable addition in Otamot.

Do you use rosemary? I have a serious allergy to it.

This is a link to the ingredient list for Otamot Essential Sauce and rosemary is not listed. However, to be on the safe side I would suggest you contact the brand directly and there is a place on their website to do just that.

Most vegetables are an excellent source of potassium and Otamot is a vegetable rich sauce so, sadly, there is little that can be done to lower the potassium. If you dilute the sauce with water or broth it would lower the potassium because the volume of the sauce would be reduced. Even this may not be enough to lower the potassium to an acceptable level for you.
