Pure Indian Foods, available in the US in 2008, is based on a ghee business started by the owners great-great-grandfather in northern India in the late 1880s. Ghee is made by melting butter at a low temperature so that the fat and solids separate. The water evaporates off, the milk solids are filtered out and what remains is golden colored, pure butterfat – ghee. Ghee has a high smoking point and a low moisture content. It is excellent for high heat cooking and can be stored without refrigeration. It is a soft, solid fat based in butter and about 50% saturated fat.
Pure Indian Foods makes a wide variety of different types of ghee. For those unfamiliar with ghee, the company offers two different sampler packs, each with six (1.1-ounce) jars of different types. It would be a great gift for a foodie.

Turmeric Superghee is cultured ghee infused with turmeric, ginger and black pepper. It gives a golden glow to sauces.

Indian Dessert Ghee with cardamom, saffron and fennel can be used in sweeter dishes, baked recipes, or spread on toast.
Italian Ghee with oregano, rosemary and thyme adds a fresh Mediterranean flavor to dishes.
Niter Kibbeh Ghee gives a subtle curry flavor to foods.
Primaloil is not ghee but a spicy blend of extra virgin olive oil, black cumin seed oil and sacha inchi oil. It is high in monounsaturated and omega-3 heart healthy fats. It is recommended for dishes that do not require heating – salad dressings, dips, pesto or as a drizzle.
All ghee varieties are made from non-homogenized milk from grass-fed cows and are certified USDA Organic.
