Should You Eat That Cloudy Olive Oil?

My guess is that you put your olive oil in the refrigerator and if so, it became thick and cloudy. It is perfectly safe to use. It will lose the cloudiness and thin out if you store it in the pantry. Oils, including olive oil, can be stored at room temperature.

It is the saturated fat content of olive oil that makes it get cloudy as it starts to solidify in the colder temperatures in the refrigerator. The lower the saturated fat content of an oil – corn, canola, safflower, sunflower — the less this change will happen. For oil with more saturated fat, like olive oil, the faster the thickening change will happen. Coconut oil, which is very high in saturated fat, will be a semi-solid fat at room temperature.
