New in the Market: Garden Lites Superfood Veggie Cakes, Veggie Chili & Cornbread, and Waffles

We love to try new foods. Some are great. Some don’t measure up and some become staples in our kitchen. See what you think.

We have reviewed Garden Lites products a number of times over the years. The company continues to innovate, offering an ever-expanding line of vegetable-based, gluten-free foods. We recently tasted four new products.

Superfood Veggie Cakes Superfood Blend is a blend of veggies and brown rice. One veggie cake (2 ounces) has 100 calories, 3 grams of protein, 300 milligrams of sodium and 25% of your daily need for vitamin A. Veggie Cakes are kosher certified (Star K). We served Veggie Cakes as a vegetable side and our tasters gave them thumbs up.

Veggie Chili & Cornbread is a gluten-free, vegetable-based entrée. One meal (10-ounces) has 340 calories, 17 grams of protein, 6 grams of fiber, 940 milligrams of sodium and 25% of your daily need for vitamin A, 50% of vitamin C and 25% of calcium. It has a spicy kick and is certified kosher (Star K).

Homestyle Waffles are made with butternut squash and carrots. Two waffles have 200 calories, 2 grams of protein, 2 grams of fiber, 240 milligrams of sodium, and 100 milligrams of potassium.

Blueberry Waffles are also made with butternut squash and carrots plus blueberries. Two waffles have 210 calories, 2 grams of protein, 2 grams of fiber, 230 milligrams of sodium, and 100 milligrams of potassium.

We toasted the waffles in the toaster oven and our tasters enjoyed them both but voted Homestyle their favorite. Both varieties are certified kosher (OU).
