Can you use cracked eggs? Don’t buy cracked eggs but if one is cracked accidentally, break the egg into a clean container, cover and use within 2 days. If an eggshell cracks during cooking, the egg is safe to eat.
Is the green ring around the yolk of a hard cooked egg safe? Yes. Sulfur and iron compounds leech out of the yolk due to overcooking. It can also be caused by the high iron content of cooking water. It does not affect the egg’s safety, taste or quality.
Will eating eggs raise your cholesterol? Research has shown that the cholesterol in eggs is not likely to raise blood cholesterol.
Are eggs with a blood spot safe? These are caused by the rupture of small blood vessels in the yolk. Though not appealing they are not unsafe. Most eggs with blood spots are removed during inspection but once in a while one slips through. They are not considered kosher.
Should you discard eggs after the use by date on the carton? All egg cartons with the USDA shield must display a 3-digit code that shows their pack date. January 1 is 001 and December 31 is 365. All other dates are required by state or local regulations not by the USDA. Fresh eggs, kept refrigerated, will maintain their quality for 5 weeks after their pack date. After that they are still safe to eat but will lose quality and become harder to separate and more runny when cooked.
