Ergo Chef  knives were created in 2002 by two brothers, one a chef and one an engineer. They set out to construct a knife that would comfortably fit into a chef’s hand during chopping while minimizing the stress on the wrist. These knives are ergonomically designed.
We tested the 8-inch Crimson SH (straight-handle) Chef Knife. It is weighted beautifully to aid in the chopping motion. It has a crimson, wood grain handle that looks like real wood but is actually made of fiberglass resin material which does not require the care of a wood handle. The blade is formed from German no-stain steel with hollow grounds that create air pockets between the blade and food to prevent sticking and allow for smoother, faster cuts. The knife retails for $82.99 and would make a great addition to any kitchen.
